Fish fillets poached in wine
Recipe (serve 8)
Step 1: Preheat oven at 350 F
Step 2: Season fish fillets with salt and pepper. Sprinkle with fresh herbs
Step 3: Dot a fireproof dish with butter. Place of the shallots, then half of the fillets, the other half of the shallots and the remaining fillets
Step 4:
Cover with white wine
Step 5:
Bring to the simmer
Step 6:
Cover the top of the dish with wax paper
Step 7: Cook in the oven for 10 minutes
Step 8: Remove all the liquid into a sauce pan. It will be used later for saucing
Wine suggestion: dry white wine
