Step 1: Put garlic cloves in a bowl. During several minutes, mash to get a very smooth
mixture. Do not use an electric blender
Step 2: Add the egg
yolk and 2 pinches of salt. Mash until the mixture is thick.
Step 3: Drop the
olive oil very slowly and blend. Pound the mixture, while adding
the lemon juice. The sauce must remain quite heavy. Add salt if needed.
Serving: you can keep aioli sauce up to 2 days if kept in a fridge. Stir before serving.
