Cress Soup Recipe serve 6
Simmer the leeks and potatoes with a pinch of salt in water for 40 minutes.
Step 2: Add the water
cress and simmer for 5 minutes.
Step 3: Off heat,
mash the vegetables with a fork. Add salt if needed.
Step 4: Stir in the
whipping cream just before serving.
Use a few water cress leaves to decorate. Boil them for 30 seconds in
water, drain and decorate the plates.
Wine suggestion: no
wine is needed for this kind of soup ! (French Wine Guide).
